My little kitchen helper.

One of The Munchkin’s most-requested shows to watch is “Ratatouille.” I love watching her sit, wide-eyed, during the kitchen scenes.

When I cook, unless I’m distracting her with a show (see above), she’s always tugging at my pantlegs wanting to see what I’m doing. Most of the time what I’m making involves a hot stove &/or icky, potentially bacteria-laden raw ingredients, but I try to involve her in my cooking when I can.

She has the apron to prove it.

At 19 months, though, it’s hard to find age-appropriate things for her to do!

Lunchtime is when I usually have her help. Her favorite thing to help me make is bagel pizzas. She knows the order in which to add ingredients, & I sprinkle a little cheese or some pepperoni on the cookie sheet for her to sprinkle onto her pizza. She was pretty good at that until she realized that those things tasted good BEFORE they were cooked, too.

Even so, it’s still fun to come up with ways my Kitchen Helper can be involved in cooking. Like helping her dad flip pancakes:

We also try to reinforce safety with our little Kitchen Helper. She knows exactly where to stand when the oven is open so that she doesn’t get burned:

Susan McQuillan, R.D., who wrote the Sesame Street cookbook “C” is for Cooking (I highly recommend this cookbook; it has great kid-friendly recipes & even lets you know which steps a small child can perform. The Munchkin especially loves seeing the Sesame Street characters on each page.), lists some of the many benefits of having your kids help you in the kitchen:

  • “…exploring food can help children improve their fine motor skills & eye-hand coordination.”
  • “Following recipes can reinforce basic math & reading skills & help children begin to learn how to follow sequential directions.”
  • Cooking from scratch starting at an early age is “building a foundation for them to make smart food choices throughout their lifetime as well as helping them develop a taste for wholesome, homemade food.”
  • “The more time your child spends in the kitchen helping with meal preparation, the more curious & open-minded she’ll become about food.”
  • In short, it’s about “helping kids learn new skills & develop a positive relationship with food.”

Even as young as our Kitchen Helper is, her time in the kitchen has taught her cause & effect, patience, & sequential steps. She gets so excited to be involved in what we’re doing, & the payoff for us is seeing her eager anticipation to taste the fruits of her labors:

I guess those age recommendations are there for a reason.

Today The Munchkin & I were at A.C. Moore to pick up a few things. While perusing the seasonal section, I found a $1 Valentine’s necklace kit. The Munchkin loves bracelets, necklaces, & playing dress-up with our winter scarves, so I thought this would be the perfect little craft. The packaging said “Choking hazard. Ages 3 & up,” but so does everything, so I got it anyway.

She was so excited about her necklace that we got it out as soon as we got home to put it together. No sooner had I emptied the package than at least three beads ended up in The Munchkin’s mouth. So the next few minutes consisted of her popping bead after bead into her mouth, me having her spit them out, & then stringing each soggy bead onto the elastic before it really did become a choking hazard.

Some of them didn’t make it.

Finally I got the rest of the beads strung & the necklace tied. Here’s what happened next:

Lesson learned. I’ll be paying closer attention to those age recommendations from now on.

Better Bolognese on a Budget.

Not long before The Munchkin was born, I found this recipe for bolognese sauce on The Pioneer Woman’s cooking blog. I had been looking for one for a while, & this met all of my criteria: it had to be delicious (duh), & it had to use just ground beef. No veal, no sausage — just ground beef. Why? Because I’m on a budget. As an added bonus, all of the other ingredients are standard pantry items, like dried herbs instead of fresh, & canned tomatoes. So much less work, so much less money. So, my 8-month-pregnant, back-laboring self set out to make it.

I’ve made it every month since.

Why do I love it so? Aside from its budget- & palate-friendliness, it’s very convenient. It takes awhile to cook up the first time, so I reserve a Sunday afternoon every month & a half or so for my husband to entertain The Munchkin while I work. After our delicious spaghetti dinner, I freeze the leftovers in smaller portions for times when I don’t have the time or energy to cook. Just pop the container in the microwave to defrost, dump the sauce into a pan to heat, & cook up some pasta! Right there, I have 5 dinners made in one afternoon! Additionally, there are so many “hidden” healthy ingredients, like grated carrots, that it’s ideal for picky eaters — so much heartier & healthier than most jarred pasta sauces.

Without further ado, here’s my version of Pastor Ryan’s Bolognese Sauce from The Pioneer Woman Cooks.

  • 1 1/2 cups grated carrots
  • 1 large red onion, diced
  • 1/3 to 1/2 cup olive oil*
  • 2 lb. ground beef**
  • 2 Tbsp. dried oregano flakes
  • 2 Tbsp. dried basil flakes
  • generous pinch thyme
  • 1 can (6 oz.) tomato paste
  • 5 cloves garlic, minced
  • 1 cup chicken stock
  • 2 tsp. red wine vinegar
  • 2 Tbsp. worcestershire sauce
  • salt, to taste
  • pepper, to taste
  • 2 cans (28 oz.) crushed tomatoes
  • splash milk (if this weirds you out like it did me at first, add a generous pinch of sugar instead to cut the acidity of the tomatoes)

*The amount of olive oil you use will depend on the leanness of your ground beef (see next asterisk). More oil for leaner beef.
**The ground beef does not get drained in this recipe, so leaner is definitely better. Otherwise it gets REALLY greasy. I usually use 90/10.

  1. Heat oil in large Dutch oven over medium heat. Add carrots & onions & saute a few minutes.
  2. Make a well in the center of the mixture, then add ground beef. Cook until browned, gradually incorporating into carrot mixture.
  3. Add spices. When ingredients are combined, make another well & add tomato paste.
  4. Let it heat while you add the garlic; stir to combine.
  5. Make another well; add stock & vinegar. Stir. Add worcestershire. Stir.
  6. Add canned tomatoes. Stir.
  7. Season with salt & pepper, if desired. (I usually save this step until last to give the flavors a chance to meld a little, & often end up dispensing with this step altogether because it tastes delicious as-is!)
  8. Add milk or sugar. Stir.
  9. Let simmer 30 minutes to 2 hours.
  10. Serve over a hearty, thick pasta that holds onto this hearty, thick sauce. We prefer rotini or penne. Top with parmesan, if desired.
  11. Freeze remainder into smaller portions. I feel that this sauce is always better the second time around!

Quiet games.

Since tomorrow’s Sunday, I thought I’d make one more post today about this new project I’m so excited about. With a very active toddler I’m always looking for ways to keep her reverent & quiet during church, & on Wednesday I think I found it. Our church women’s group, called Relief Society, had an activity to make file folder games. If you haven’t heard of file folder games, you’ve probably seen them. They’re great because they keep your kids quiet, teach them matching & sorting, & everything stays together because it’s all fastened with Velcro! Here are the 3 we made on Wednesday:

All you need are a printer to print off the pages, some file folders, a laminator & laminating pages (apparently laminators are quite inexpensive, but you can also go to Kinko’s & do it at their self-serve laminator), scissors, 6″x9″ manila envelopes, double-stick tape, & Velcro tape (to be economical we just bought the strips & cut them, but that really gummed up my scissors, so if you can, you may want to get the adhesive Velcro dots instead).

First, print off both pages & cut out each game piece. Laminate both pages–the background & the game pieces–& tape the background page to the right inside of the file folder. Tape it well, not just around the edges (I learned that the hard way–pulling off the Velcro can require some force!). Then cut out the laminated game pieces. Tape the manila envelope to the left inside of the file folder. Stick the “scratchy” side of the Velcro pieces in the desired spots on the background page & the “fuzzy” side on the back of each game piece. There will be more game pieces than spots on the board. The rest of the pieces go in the envelope.

It’s that easy!

Resolutions.

To paraphrase a local TV station’s nightly curfew message, “It’s January 22. Do you remember what your New Year’s Resolutions are?”

One of mine was to create this blog. Check! Doesn’t that feel nice? I’ll admit that there have been a couple years where I’ve made lame-duck resolutions I knew I’d attain anyway (“Graduate college”) or just didn’t make any at all, because I’m not a big fan of failure. Nah, mostly I’m just lazy. But this year I decided to take a couple risks & make real resolutions. Like the standard pie-crust resolutions: “Eat better. Exercise.” Easily made, easily broken. I still haven’t made it down to the gym in our building once.

I’ve done a little better with that first one: eat better. Living so near to New York City, we’re definitely eating well, that’s for sure. But to balance out my gourmet pastry habit I resolved (that word seems so much stronger than the word “resolution,” doesn’t it?) to try to be more mindful of my everyday eating: more balance, less mindless snacking. A healthy mom is a happy mom is a great mom, right?

So to help me keep my resolution, I resolved (there’s that word again!) to keep a food diary. I had read about a study that found that people who kept food diaries lost more weight than those who didn’t. I’m not out to lose a ton or anything, so rather than focusing on exact portion sizes or calorie counts (remember, I’m lazy), I simply wrote down what I ate: “1 bowl hamburger-veggie soup.” “2 cookies.” The only new or different food I added to my diet was Kashi GoLean Crisp Toasted Berry Crumble for breakfast instead of the other cereals or oatmeal that I usually eat, because it had more protein, so I knew it would stick with me longer & help me fight the 10am (let’s face it, 9am) snack attack.

You know what? The diary works! It really does! I’ve still been baking treats & eating the same stuff. But being accountable for what I eat on paper has really helped me limit my portions & treats. If I know I’m going to have to write down that third brownie, I’m a lot less likely to eat it. I don’t know whether that’s laziness or embarrassment at seeing 4 brownie entries in my food journal for that day. But whatever’s driving it, I’m reaping the benefits.

How do I know how well it’s working? Because I saw what happened when I didn’t record a given day. One morning I was so exhausted from going to bed too late for too many nights in a row that, instead of cereal, I had a Fudgy Wudgy (that recipe will be forthcoming, don’t you worry). I immediately felt sick to my stomach, & made poor dietary decisions the rest of the day. Then last week my sister was in town for her first trip to NYC. We redefined the term “gastrotourism” last week. Let’s just say there’s a several-day lapse in my journal for that period. Which may have included trips to Carlo’s, Magnolia Bakery, a by-the-pound candy shop, & Max Brenner chocolate.

So write it down! It helps!
