Reindeer cookies.

The Munchkin has been looking forward to making these for DAYS. & they turned out just as great as we hoped they would!

I had originally thought to do spice cookies, but The Munchkin said peanut butter, so that’s what we did! Lucky for us, Bakergirl had already made delicious peanut butter reindeer cookies! Hers are for mini reindeer, but I had full-sized “features,” so I made them full-sized. It yielded 18 cookies instead of 40.

  • 3/4 cup creamy peanut butter
  • 1 1/4 cup packed brown sugar
  • 1/2 cup shortening
  • 3 Tbsp. milk
  • 1 Tbsp. vanilla
  • 1 egg
  • 1 3/4 cup flour
  • 3/4 tsp. baking soda
  • scant 3/4 tsp. salt (I felt it was plenty salty from the peanut butter)
  • pretzels (I think chocolate- or yogurt-covered pretzels would “stick” better)
  • green M&Ms
  • red Cadbury Christmas Mini Eggs (or you could use peanut M&Ms, but I’m kind of obsessed with the Cadbury Mini Eggs, so we’re using those)
  1. Preheat your oven to 375. Line a baking sheet with parchment.
  2. Cream together first 5 ingredients in your electric mixer. Add egg & beat until just blended.
  3. (Optional: combine dry ingredients in a separate bowl.) Add to the wet ingredients & mix until just incorporated.
  4. Roll into 2-inch balls. Pinch one end between your thumb & forefinger for the “chin.” Then flatten between your palms. Place them on your prepared cookie sheet; I fit 9 on a sheet to keep them from spreading.
  5. Bake 9 minutes or until set in the middle & just starting to brown.
  6. Remove from the oven, & immediately (carefully!) press the pretzels in for antlers. Do this for all of the cookies right away; the pretzels don’t stick as well as the other “features.”
  7. Let your kitchen helper help you press in M&Ms for eyes (M side down, of course) & a Cadbury Mini Egg for a nose.

I was amazed at how good The Munchkin got at decorating these!

Her first attempts were rather… Picasso-like…

But by her 6th one, everything was in its proper place!

Who knew that cookie decorating could teach a two-&-a-half-year-old anatomy?

Broomstick Treat Bags.

You’ve probably seen these floating around (pun intended) the blogosphere in the past, but they are so cute & easy I thought I’d share them anyway.

Here’s what you need for each:

  • 2 brown paper lunch sacks
  • 1 pretzel rod or a stick from your backyard
  • treats to fill it with
  • festive ribbon or raffia

Now here’s all you have to do:

  1. Cut a few inches off the tops of your bags. Take 1 bag & cut thin strips down about an inch. Then open the other bag & fold out the bottom so you don’t cut into it. Cut thin strips almost all the way down the length of the bag.
  2. Now here’s the hardest part of the whole process: putting bag #1 inside bag #2. Open both bags, then pull the bag with the long strips around the bag with the short ones. Horrible explanation, I know. You can figure it out & say it better than I can, I’m sure.
  3. Fill the bag with goodies. Then place the pretzel rod in the middle & gather the bags around it. Make sure all of the strips make it into your handful.
  4. Tie the ribbon around it. Really tight. Then pull the pretzel rod out a couple inches so it’s still firmly in there, but the broomstick looks more to scale with the bottom of the broom.
  5. Fluff out the little strips above the ribbon, & you’re done!

In addition to working for Halloween, they’d be great at a Harry Potter party. Just finish them off with a golden Snitch nametag & (this brilliant idea comes from My Husband Who Refuses To Read The Books But Still Knows Everything About The HP Series) a hippogriff feather!

Busy Mom’s Strawberry Shortcake.

I hope everyone had a happy Easter!

The Easter Bunny paid us a generous visit:

But man (& Munchkins) can’t live by chocolate & jellybeans alone. However, I really wasn’t interested in spending hours on an Easter menu for just us & some hungry missionaries, so here’s our quick-&-easy Easter menu:

  • A Cook’s brand spiral-sliced ham I got for 79 cents a pound with my ShopRite card, with glaze packet included. (No mixing of honey with anything!)
  • The easiest Funeral Potatoes (the Mormon term for cheesy potatoes — this came about because they’re often served at funerals for the families of the deceased) ever, found here & not even made with the cornflake topping. But still cheesy, melty, comfort food-y!
  • Sliced pineapple — I didn’t even feel like making a salad because I was planning on using all my salad energy on Cobb salad with my leftover ham.
  • Strawberry shortcake

 

This shortcake recipe comes from my mother-in-law… I don’t think My Husband The Persnickety would ever eat it any other way. It’s easy, delicious, & cheap. Win!

Just make a white cake mix using the whole-egg recipe (2 whole eggs instead of 3 egg whites). I poured mine into a Bundt pan to make it prettier, but you could just do a 9×13 even! Give it ample time to cool, then mash up a 1-lb. container of strawberries with a potato masher & add a little sugar to let it macerate. Then whip up some whipped cream (you know, powdered sugar, vanilla), & put it all together! My Husband The Devourer likes the 9×13 method because you can cut it in half & stack layers upon layers of cake, strawberries, & cream.
